President's Day Baked Potato

Today America celebrates presidents, and today I am celebrating Jacqueline Kennedy Onassis. The legend apparently ate one meal a day {a baked potato with sour cream and caviar} smoked like a chimney, drank champagne, wore white jeans year round, with pearls. Celebrate ladies, and be you!

Directions: Wash, rub in salt, cover with aluminum foil and bake for an hour at 450 degrees. Remove aluminum foil, brush with olive oil, put back in oven for 10-15 min to crisp up skin. The salt makes the interior of the potato super fluffy. Place in small bowl, mash a bit with a fork, add sour cream, chives, salt and pepper, and of course caviar if you wish ;)
