Guacamole doesn't have to be Mexican food! Instead, make mini kale salads with guacamole and peppered shrimp! #NationalGuacamoleDay
Guacamole: Combine 1 avocado, 3 tbl. sour cream, dash of Cholula, cayenne, dash of lime salt and pepper.
Shrimp: Sautee shrimp in olive oil, salt and pepper.
Kale Salad: Finely chop kale and toss in dressing. I love Lifehouse Opa Feta Dill.
Assemble: Place kale at the bottom of a glass or bowl. Top with guacamole and shrimp.
