Peach & Pecan Sponge Cake

What do you do with leftover pecan torte batter and an extra peach? Add 8 tbl of flour to it, bake it, and serve on top of ice cream! What a fun way to take leftovers from #NationalEatAPeachDay and #NationalPecanPieDay and create a sponge cake for #NationalSpongeCakeDay

2 cups pecans
3 eggs
1 cup sugar
3/4 cup light corn syrup
2 tbl melted butter
2 tsp vanilla
8 tbl flour

Directions: Combine all of your ingredients in a bowl. Spray a loaf pan and pour batter inside. Bake for 30 minutes at 350 degrees. Remove from oven, it will seem gooey, allow to cool. Spoon out on top of vanilla ice cream and top with coconut.
