Fun Football Sunday Snacks

Happy Sunday! With the holidays just around the corner we have been baking and eating so many delicious sweets, but we may need a salty, slightly healthy, break! These party snacks did the trick, and perfect to munch on while watching football. What we don't consume will go right into my lunch for the next few days, check it out below!

Corn & Bean Salsa

1 can black beans
1 can corn
1 avocado, diced
1 tbl lime juice
1 tbl olive oil
2 tbl taco seasoning
1 tsp hot sauce
1 tbl cilantro, minced
1/2 onion, diced
salt and pepper, lime zest

Directions: Combine all ingredients in bowl and stir to combine. Serve with chips or rice crackers. Perfect on top of a salad or chicken this week!

Black Bean and Chickpea Hummus

1 cup black beans
1/2 cup chickpeas
2 tbl olive oil
2 tbl tahini
3 tsp taco seasoning
¼ tsp cayenne
½ tsp sriracha
1 tbl cilantro
1 tsp lime juice
olive oil and cayenne to garnish

Directions: Combine all ingredients in food processor. Puree. Leave some chunks! Place in bowl and drizzle olive oil on top. Sprinkle cayenne pepper. Serve with carrots or pretzels. 

Sweet Potato Fries with Taco Seasoning

Directions: Toss sweet potatoes with taco seasoning. Bake sweet potato fries for 35 minutes at 425 degrees, until crispy. Because of their sugar content they won't get too crispy but that's ok! To make aioli combine 4 tbl mayonnaise, 1/2 tsp taco seasoning and 1/2 tsp lime juice.
