Carrot, Date and Banana Morning Muffins

Healthy, and delicious! With a bit of pumpkin spice for this season! #pumpkinspiceeverything

1 1/4 cup flour
1/2 cup brown sugar
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp pumpkin pie spice
1/2 tsp kosher salt
1 cup oats
1/2 cup dates, chopped
3 tbl olive oil
1 egg
1/3 cup milk
1 cup shredded carrots
1 banana, mashed

Directions: Whisk together flour, brown sugar, baking soda, baking powder, pumpkin pie spice and salt. Stir in oats and dates. Add oil, egg, milk, carrots and banana. Spray a 12 muffin muffin pan with Pam. Bake at 400 degrees until toothpick comes out clean, approximately 17 minutes.
