Poppyseed Cakes with Sour Cream Frosting

A colleague of mine was tossing these roses and I salvaged them to top my cute little poppyseed cakes with sour cream frosting - a perfect dainty dessert to brighten a rainy afternoon!

Poppyseed Cake

2 sticks of butter
1 cup sour cream
1 1/2 cup sugar
2 1/2 cup flour
1 teaspoon baking soda
1 can Solo Poppy Seed Cake and Pastry Filling
4  eggs, separated
1 teaspoon kosher salt
1 teaspoon vanilla

Directions: Beat butter and sugar in large bowl with electric mixer until light and fluffy. Add poppy filling and beat until blended. Beat in egg yolks, 1 at a time. Add vanilla and sour cream. Stir flour, baking soda and salt and add to poppy mixture. Beat egg whites in separate bowl with electric mixer until stiff peaks form. Fold beaten egg whites into batter. Spray a cupcake pan with PAM and fill cupcake pan with batter. Bake 30 minutes or until cake tester comes out clean. Recipe from Solo!

Sour Cream Frosting

1 stick butter
4 cups powdered sugar
1/4 cup sour cream
1 tsp vanilla

Directions: Beat in stand mixer with paddle attachment for 5 minutes, until fluffy.
